David, I hollow grind at 30 degrees, and then freehand on the hollow - so 30 degrees. I use this angle for all steels in BD planes.

When I was testing PM-V11 vs A2 shooting end grain with the LN #51, I did try the PM-V11 at 25 degrees. It did not fare well. Changing up to 30 degrees produced a significant improvement.
