The second test with maple..

...The first test with maple showed formation of small lines with the alloyed irons, and at the time, I wasn't sure if it was sharpening refinement or not.

The second test showed the same thing, except in this case, I am sure that the irons were cleanly sharpened with no notches. Both 3V and V11 developed small lines (visible, but can't be felt).

All bets were off with the mineral occlusions in the wood (or whatever you'd like to call them) - the lines created by those were not small.
