What I remember about the Kato wear study is that they put the cap iron extremely close and had a very thick shaving for that kind of setting. They also did an extreme amount of planing between sharpening sessions, which we also would not normally do with such a close setting. The whole thing was just far removed from the practical art of planing wood.

The planing was done by machine, which was alright, but a real person doing real work has an incentive to treat their body so as to be able to plane the next day or the next decade. So these considerations influence our settings and our sharpening regimen.
