Thanks for the advice, Steve. I had a knife at one point that said "bos" on the side of the blade. I think it was 154 cm and plenty hard.

Almost across the board, my experience is that the specs used for knives are on the soft side to tolerate abuse and we never really push any toughness limits with woodworking. Edges that don't freely bend do better in planes.

Not surprised that someone else can't match bos when it comes to heat treating. There's still nuance just in things like you mention, and it's like cooking. You have to make the dish right every single time as well as knowing how to do it. $30 is beyond reasonable.
