Brass is vastly harder than aluminum for a steel blade. I would re-grind a relatively soft blade to a high angle if I were doing that regularly. If using a chisel, this is a perfect use for one of those horrible blue Marples :D

The 18K gold John mentioned must have been almost like planing lead! That's pretty cool, but I think the cheese still wins the day :D Now we need a thread discussing bevel up or bevel down for cheese. Proper angle to cut some of the more difficult soft cheeses without excessive tear out.... :D
