May I suggest the "convex bevel" approach?

My set is likely from the 1970's (handles say MARPLES RIDGEWAY) and I use them constantly - even shallow mortises - and they're decent steel.

I don't use power grinders, so the first licks on a coarse stone took awhile.

Now, a medium fine stone and strop are sufficient.

There are more precise approaches but this works.

Fine India (carborundum) /Lily White Oachita /Strop with jeweler's rouge

I had poor results with more coarse stones, in which the steel "plowed" tracks.
