Did you use wet/dry paper, and if so was it wet when you flattened the stone? I always flatten when the stone is wet (not such an issue for Shaptons but other stones soak up water) and rely on a layer of water to hold the paper down to the granite plate.
I've used grits from 120 to 600 and generally match the coarser grits to coarser stones.
