I no longer have a tormek, but I had one, so I recall that holder system (except I didn't build a separate base). It should be doable to just move the blade back and forth over the part of the wheel that's doing the cutting (which is essentially what I do freehand). If someone was anal retentive, they could orient your rest setup so that both outside edges of the wheel were doing work and worry about using the middle of the outsides ever seem to stop cutting (they probably won't).
I had enough of all of the tormek bits pretty early, but I have decent (but relatively small, which I prefer) two-piece cast rests on my grinder. I think the whole setup is a detriment in this case, and a grinder with decent rests would be better and more productive. But it still shouldn't be an issue with the wheel, as your wooden bases could be reoriented however you'd like.
