I did that recently. I'd bought a Tidioute Appleseed knife, and though I liked it a lot as delivered, I could not sharpen the hawkbill as well as I prefer. I ground and filed the edge to straight, and am gradually sharpening to get to the long bevels that pocket knives should have.
Once had to return a Gerber folder because the wooden scales began to delaminate, shortly after I'd gotten the bevels ground wide and then polished beautifully. When it came back, the wood was perfect and the blade reground to original configuration, but coarsely and with blue discoloration.
From then on I've tended to do my own work...
