Wiley, as strange as it may appear, I do not walk around with a knife in my pocket. I have a small Swiss Army Knife in my briefcase and a combination tool in my desk drawer, but that's about it.
I do, however, have a few pocket knives that I use in the shop. My favourite is the Lee Valley "Woodworker's Knife". This has a single, double bevel blade. The original has a hooked/bent blade - I think it was intended to cut carpet. The blade is thick, and tapers down. This makes it handy to split thin boards for pegs.
Of course I modified mine - straightened the blade. Rob Lee says I am a compulsive modifier of tools. What can I say?
I like the wide bevels. They are as close as one can get to a single bevel blade. Easy to hold against a straight edge for striking a line, or to hone. Good steel - holds an edge for a long time.
