I don't know anything about drying green spindles. But we got the pizza cooked and eaten.

If you dry the spindles too fast they will fracture. I have no idea what too fast is for something that looks different than a stack of 4/4 lumber. However, 120 F is not hot enough to get to 7% moisture content unless the outside humidity is very low. Might work in the winter. Where I live I need to get up around 140 to 150 F to reach 7%.

The final moisture content of the wood only depends on the humidity at the temperature of the air around the spindle.
