Yup on rounding. A Greek architectural cabinetmaker I worked for around 30 years ago showed me the Secret of the Cap Iron. After cleaning the edge on a sharpening stone, wipe the upper side to remove any burr, which left a hair thin line (what some people are now calling a microbevel). Since there was no need to be careful of any angle, it was really a very slight rounding of the cap iron edge but so slight no shaving would ever catch on it and no shaving ever did.
