... and your helpful guidance. Polyurethane (I'd use oil-based) is a hard film finish that resists every kind of insult, and, as Derek says, can be sanded back to a nearly invisible surface. That's what I used on my birds-eye maple kitchen countertops recently and I'm very happy with the choice.
