What you want to avoid is bending back the wire and breaking connection with the rest of the blade, which often causes gaps to form in your edges. So removal needs more gentle treatment. Interestingly, something I picked up from sharpening toothed blades, is that you can remove the wire by striking the chisel normally into some wood, harder than soft.

Another thing I do when removing wire on a stone is to make sure to swipe the blade in a forward direction, away from the bevel. You can try this and see the results with a 10X loop.
