I'm not sure I'd say the unbeveled side touches first. It's the edge, defined as the juncture of both sides coming to a point, that touches first. No?

On to your question about the bevel shape, I go for flat; but as David said, there's not much good to say about convex bevels and probably not much bad to say about some concavity as in a hollow grind.
