The LV is brilliant because it minimizes the problems of a sharpening jig by making it easier to acquire the bevel, and making the secondary a micro step and repeatable. I suppose the main problems of micro bevels are that they tend to consume material faster which is fine for cheaper chisels, and also they weaken the edge. Both of these problems is made less severe by ensuring that the step between the angles is as small as possible, and is as repeatable as possible. The LV could even have a half degree step making the differences pretty minor.
I suppose a further part of the problem with all this is that while folks think they are efficiency minded, they are still only creatures of half measures. If one wants to see what efficient chisels look like, one need only look as far as the turning field where blades are removable. and there are other examples. But to the extent that chisels are modeled after arty old designs and can be used up expensively, a concern for traditional methods that go with their use seems reasonable. It does no more harm to a Japanese chisel to micro bevel it as Krenov suggested than to any other. Just as a Krenov cabinet could be adapted to casters for making it easier to move around, but the insult, and impact on value are a consideration.
