Persimmon root wood ()

While I have chopped through numerous roots when digging post holes I have never actually examined or worked "root wood". What I chopped through seemed fibrous and not like "real wood". Anyone with experience....what is root wood like?

As far as Persimmon I got some by accident in a load of otherwise useful wood. It was hard, and dense and dried to an unattractive grey. I have never figured out anything useful to do with it. It might make a durable cutting board. The areas around knots turned black upon drying.
