If you start on the convex side, the board will rock as you move it and you'll be forever chasing the high spot as it moves back and forth along that edge.

The only time I've seen this strategy work is when the high spot is only 1/16" or so and the jointer is set for a cut deeper than that. Then you knock down the high point with one pass.
