My preference would be an alkyd/soya oil varnish like Pratt & Lambert 38. You want to avoid linseed oil and tung varnishes both of which are significantly amber and become more amber over time. The P&L 38 has minimal yellow cast when applied and does not yellow significantly over time.

Varnish would be the most durable finish particularly for items that will get handled frequently. Oils in and on fingers will ultimately damage most finish, some faster than others. The P&L 38 is an excellent finish.
