Coastal or inland?
If you go inland, there is always Mount Rainier and Mount St. Helens in Washington.

I like the Oregon coast. From Astoria down to Brookings. There are so many nice little parks, beaches and hikes - you would get tired doing a fraction of them. I spent a week on the North Oregon coast a few years back. It was great.
